Three weeks in to the 5:2 and tonight's a lazy night; roasted vegetables and cous cous. I don't think anyone needs to see a recipe for this meal, even I can cook it. Just.
I'll give you the recipe anyway, but I should point out you can use any vegetables you want to make your tasty low-calorie dinner. Here's what we (he) did. Oh, I haven't photographed all of the ingredients because I couldn't include them all and still make a smiley face, so I went for the smiley face.
Roughly chop the vegetables and finely slice the garlic, and add to a roasting tray with the olive oil, red wine vinegar and mixed herbs, plus salt and pepper to season.
Mix together and roast in the oven at 200 degree centigrade for approx 40 minutes, turning half way through.
Make the cous cous as directed, using just water and a little salt to taste. Just before serving add a large squeeze of lemon juice to the cous cous. Then, serve.
